Vegan Smoked Gouda Au Gratin Potatoes

Here is another fabulous recipe from Food Intuitive and Chef, Gail Blair.

Smoked Gouda Au Gratin Potatoes 8 servings

Gluten Free, Dairy Free & All Plants!

2 ½ pounds of russet or Yukon gold potatoes, sliced ¼” thick
⅓ cup nutritional yeast*
2 tablespoon tapioca flour
1 ½ teaspoon sea salt
½ teaspoon white pepper (or less – I like it a little spicy)
1 teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon smoked paprika
2 ½ cups unsweetened So Delicious Coconut milk Beverage
1 teaspoon raw, unfiltered apple cider vinegar
½ teaspoon Dijon mustard
6 butter slices about a teaspoon each (omit for vegan version)

Grease 9 x 13 baking dish with butter (olive oil for vegan version). Preheat oven to 350F degrees. Arrange sliced potatoes evenly in pan (its okay to overlap).
In a medium mixing bowl, whisk together dry ingredients and then whisk in milk, vinegar and mustard. When well blended, pour sauce evenly over potatoes.
Lay butter slices on top about every 3 inches. Bake for about 1 hour or until potatoes are fork tender. Serve piping hot.

This is as cheesy as it gets. I swear, no one will ever know!

*2 tablespoons of nutritional yeast packs a whopping 8 grams of whole protein and is a good source of B-12 making it a vegan’s best friend.

Note: If you want a traditional scalloped potato dish, just leave out the smoked paprika and mustard.

Other Ideas: Melt 3 tablespoon of butter (use plant-based butter for vegan version) in a large sauce pan and add sauce ingredients. Bring sauce to a simmer until JUST starting to thicken. Add slightly undercooked gluten- free macaroni (Ancient Grains Corn and Quinoa is my favorite) to an 8 x 8 baking dish or casserole. Pour sauce evenly over pasta. Top with gluten-free seasoned bread crumbs and shredded vegan cheese (or a little sharp cheddar for vegetarian). Bake at 350F degrees until just bubbly around the edges (about 25 minutes).

Pour sauce of steamed veggies like broccoli and cauliflower. A healthy way to get the kids to eat their veggies!
