Well, can I just say how awesome this LTYG community is? Because immediately I received this below recipe from a reader named Emilie!

Here are some gut-friendly winter AND summer treats she and her husband created when they felt like having a healthy dessert:

Winter treat

In a small oven-safe dish, bake one of the following:

  • Frozen cherries and/or blueberries mixed with coconut mana or coconut oil
  • OR cut-up granny smith apples mixed with coconut mana or coconut oil

Just my own added thought, but cocoa butter may work well here too. Cocoa butter is a very healthy/healing fat, and very satisfying to the body’s satiety-meter. It has good antioxidant levels and contains the following vitamins and minerals: magnesium, potassium, calcium, iron, vitamin D, vitamin E, Vitamin B2, Vitamin B1, vitamin A.

Emilie likes to add a bit of maple syrup before eating, but if you’d like the added immune benefits of manuka honey, that would work too. You could probably also use stevia or monk fruit, or a sugar alcohol xylitol or erythritol – powdered Truvia or Lakanto work well. But don’t use sugar alcohols if you’re prone to gas or diarrhea as they will make both conditions worse.

Or, you can always omit if you don’t want any added sugars! I personally feel the berries would be sweet enough on their own when baked, but up to your preference.

Summer treat

Blend the following:

  • Frozen honeydew melon chunks
  • Frozen cherries
  • Frozen blueberries
  • Any other frozen fruit you like
  • Organic store-bought or homemade oat milk

Emilie recommends Chobani Extra Creamy oat milk or Oatley creamer as best for frozen treats – and that they also turn any tea or hot cocoa into a rich and creamy treat.
